An unexpected guest.....

Thermomix Carrot Cake

350 g carrots
1/2 drained can of pineapple
100 g oil
120 g brown sugar
3 eggs
300 g flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp vanilla
100 g walnuts
Blend carrots speed 8 / 20 seconds
Blend oil pineapple brown sugar and eggs on reverse 15 secondsstrawberries 056 strawberries 058

Thermomix Zucchini Bread

500 g Zucchini
3 eggs
1/2 drained can of pineapple bits
200g oil
100 g sugar
400g flour
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp nutmeg
100 g chocolate sprinkles

pulse turbo raw zucchini 5 times
Add all remaining ingriedients
Blend speed 4/ 30 seconds on reverse until mixed
Pour into greased loaf pan
Bake at 325-350 degrees fahrenheit for 50-60 minutes until inserted toothpick comes out clean
Let cool

Thermomix Pavlova

 350 g white sugar
250 g egg whites
1/2 tsp cream of tartar
1 tsp white vinegar
1 tsp vanilla extract

Place sugar in bowl and blend for 20-25 seconds/speed 9. Empty, clean bowl and set aside.
Insert butterfly and add egg whites cream of tartar and whip 5 minutes/ speed 4/  37 degrees Celsius
With butterfly rotating/ speed 4/ 37C/ 5 minutes add sugar gradually
Add vanilla and vinegar and rotate speed 3 10 seconds

Transfer onto baking tray lined with parchment or silpad into desired shape
Reduce preheated oven from 350 degrees fahrenheit to 280 degrees fahrenheit and bake for 1 hour
Let cool in oven for 3 hours
Top with fruit and whipping cream
This is an organic local strawberry!

Cindi O'Meara's Gluten Free Bread/PICTURES BY MONICA

Thermomix Ketchup

750 g fresh ripe tomato's
1 red onion
5 garlic cloves
nutmeg grated 1/2 tsp
90g red wine vinegar
50g Agave syrup
1 tsp sea salt
1 tsp mustard seed
2 Bay leaves
5-10 sechuan pepper corns
10 black pepper corns
Place tomatoes, onion, garlic red wine vinegar and chop 5 sec/ speed 7
Add remaining ingredients and cook 40 minutes/ varoma /speed 2
Blend 30 seconds/ speed 10

Banana Bran Bread with Apricots

Thermomix Banana Bran Bread
100 g oil
250 g yogurt
1 egg
100g brown sugar
3 bananas
Mix  above ingredients speed 4/ 3-5 seconds, scrape down bowl
250 g flour (whole wheat or white)
150 g Wheat bran
1tsp (10 g) Baking powder
1 tsp (10g) Baking soda
Mix speed 6 for 25 seconds
Add 100 g chopped apricots
Bake at 325 degrees fahrenheit for 1 hour or until toothpick inserted comes out clean.

Green Mango Chutney Thermomix

Green Mango Chutney
3 green mangoes peeled
250 ml apple cidre vinegar
125 g brown sugar
150 g cranberries
75 g raisens
1 inch fresh ginger
1/2  whole garlic clove peeled
1 cinnamon stick
1 tsp whole cumin
1 tsp coarse salt
1 tsp chilli peppers
2 Star Anise
-place cumin, cinnamon star anise and chop/speed 9/10 sec 
-roast 100/2mins/ speed2
-add garlic,ginger chop speed 9/10 sec
-add mangoes/ chop speed 7/20 sec
-add cidre vinegar and brown sugar varoma/reverse speed 3/ 15 mins

-add raisens and cranberries cook varoma/reverse speed 3 /20 minutes

Thermomix Meatballs

All recipes can be used without using the Thermomix however it will take much longer:)
Thermomix Meatballs
600g ground beef
150g Asiago,(grated)- cube and drop into machine 10 seconds speed 9 (can substitute parmesan etc)
10g Worcestershire sauce
2 egg whites
40 g fried garlic
chopped fresh parsley 1/2 bundle or to taste
salt and pepper
Chop cheese, set aside, chop breadcrumbs 5 sec/ speed 9.
Add cheese and remaining ingredients. Mix on reverse 30 seconds/ speed 8
Steam Varoma, 20 minutes/ speed 2

 is Schnapps?
Schnapps is a distilled alcohol usually made from fruit containing a stone or pit. This schnapps pictured is from Ihringen in Baden Wurttemberg.  The fruit was grown inside the 1 litre glass bottle.  Bottles are placed over the flower (blossom) and the fruit is allowed to mature inside the bottle.  This particular bottle had two pears mature inside the bottle. (extremely rare) The bottle must be turned several times a day or the sun will burn a hole in the fruit. (magnify)  When ripe the bottle is careful removed and filled with distilled pear schnapps.  The pear will keep it's shape in the bottle providing the fluid content doesn't go below the fruit.

Thermomix capacity and overfilling

One blending hot soup in your Thermomix be really careful not to go over the maximum fill level.  I did this forgetting how much fluid was in the container and ended up burning my chin.  What a mess and very stupid however it could have been a lot worse.  Remember to never overfill your container!

Thermomix juicing (lemonaide)

When extracting juice for lemonade you need 1 lemon, 1lime and 1 orange.  Blend it for 5-10 seconds with 60 grams of sugar on speed 8. Add 650 grams of water and stir in reverse for 30 seconds. Ready!

This was a topic of discussion at a recent demonstration on how people need to be careful when juicing  upwards of 3 citrus fruits to extract juice. (Too many calories and not good for diabetics because of the sugar) With the thermomix you are using the whole fruit which has the oils in the skin thus flavouring the juice as well. You end up with a superior flavour and good for you.  Also you are using the whole fruit which means you don not need to buy as many.  You save money as well.

Morimoto On Maui

monisiphone2 406I went to Morimoto's for restaurant week in Wailea.  It was May 25-May 31st with a prix-fixe menu of $49 per person.  Vancouver has the same type of specials in January called dine out Vancouver. It's a reasonable way to sample fine dinning for one all included price. This way you will know if you want to return on a regular day or not depending on the food and service.  You usually get three courses with choices and you pick one of each.  Then you can add extras and alcohol.  It is a great deal if you love fine dining but cannot afford the cost.monisiphone2 411
This was our amouse bouche.  It is proscuitto ham with a tempura fried pineapple with some foam?( can't remember what kind)monisiphone2 415.  It was very light and delicious.
The above photo is whitefish carpaccio with hot oil mitsuba.  Also very light and tasty.  The view from the restaurant is lovely and there was a function going on by the beach.  Apparently the hotel (Andaz) has many that go on.

The manager Cindy and all the wait staff are very nice.  My daughter was cold and I asked for a towel where one of the hostesses ran to the pool to get her one and let her use it as a wrap.  Our water glass was never empty.

This is the other appetizer kakuni. Ten hour pork belly, rice congee and soy scallion jus.  Pork belly is pretty popular all over and it truly is delicious when prepared properly.  This one tasted excellent!

This is the braised black cod with ginger soy reduction.  Also very tasty however not much else to eat.  It's hard getting used to the portion size.

This was my husband's meal and he was very glad for this portion size.  He said it was delicious and it filled him up.  He doesn't appreciate fine dining as much due to the portion sizes.  He is also more of a pasta and pizza guy.

Road to matcha. Kula strawberries, white chocolate rocks. Plenty and nice textures.

Chocolate! caramelized ganache, cuban red bananas and lilikoi.  (I asked in the grocery store and found out they are a type of passionfruit.)  Really great flavour and not so sweet.
