Thermomix Gluten Free Almond Cake

This is gluten free recipe is from Thermomix My way of cooking, 5th edition cookbook.
It is called Almond Cake from Santiago on page 254.
It has 4 ingredient's and is super simple to make.

250 grams Almonds ground. (It says to peel them but I didn't)speed5/15 seconds
250 gram sugar
lemon peel chopped
4 eggs
Mill sugar 15 sec/speed 10

Mill almonds/15 sec/speed 5
Add lemon peel and chop 15 sec/speed 10
Add eggs 2min/speed 4
Add almonds mix 5 sec/ speed 3
Bake at 350 for 35 minutes until golden.

If you want to have this cake  lighter, separate the eggs and beat the egg whites until fluffy. Do everything the same and fold in the egg whites at the end.  Also line the bottom of the pan with baking paper to have the cake come off the bottom easily.

Thermomix Paneer

2 litres half and half
1 juice of 1 lemon and zest
salt and pepper to taste
Add milk to Thermomix bowl and set 18 minutes/100C/speed 2
Add butterfly and lemon zest stir/ 20 seconds speed 2
Add lemon juice and stir 10 sec/ speed 2
Drain into colander lined with cheesecloth and let stand 1 hour.
Drain and let rest in fridge for 3 monte hours or use a.s.a.p.

This recipe can be made with milk as well.  It is very similar to Ricotta.  You can also add flavouring when adding lemon zest. e.g.. chilli flakes, coriander, garlic etc.

Thermomix Salmon Cakes

1 large Shallot
2 garlic cloves
500g trimmed salmon
1 T fresh chopped dill
1 egg white
100 g breadcrumbs
salt/pepper to taste
Mrs Dash to taste
Chop onion, and garlic and scrape down bowl. 5 second/speed 6
Add salmon and pulse on turbo 5 times
Add remaining ingredients and REVERSE/ pulse until just combined
Shape into patties and fry in butter 2-3 minutes per side.

Steveston Salmon Trip

Went to lovely sunny Steveston to see about buying local salmon because the Sockeye run was opened for 24 hours. Bought 3 Sokeye, and 2 Spring.  One has white flesh the other pink.  The white is as good but has a more oily flavour. Came home and fillet them, made salmon stock and froze some for later use.

Vancouver's Craft Beer Places

On Sunday, hubby and a couple of our friends went to check out some of the newer Craft Beer Places.  Vancouver is turning into Portland Oregon.  Very popular to drink fresh Beer.  Something we did when we lived in Germany many years ago.  The selection is fantastic and here are a few photos of where we went.

Thermomix Pasta e Fagioli (pasta and Beans)

200g dried beans soak in thermomix overnight covered with water
In the morning cook beans until tender on REVERSE 20 minutes/speed 1/Varoma

drain and set aside

2 garlic cloves
1 onion - chop 3 sec/speed 6 and scrape down
add 1 tsp olive oil and sauté 3min/varoma/speed 1
Add 1 stalk celery roughly chopped,1 tin tomatos,cooked beans and 2 tbsp vegetable stock
Cook8 minuts/100C/speed 1 REVERSE
Add pasta and 300g water (hot) cook 10min/100C/speed 1 REVERSE

Ingredient List
200-300g beans
2garlic cloves
1tsp olive oil
1 454g tin tomato
2Tbsp vegetable stock
200g small pasta (ditali,macaroni)
salt and pepper to taste

Thermomix Peach and Blueberry Cobbler

6 peaches cut into 8 pieces
2 cups blueberries
1tsp kirsch (cherry schnapps)
75 g Marzipan
125g butter
2 eggs
200g flour
1 tsp baking powder
100g sugar
125 g sliced almonds
Place peaches and blueberries in baking dish and drizzle with kirsch.
Add butter, marzipan blend speed 5/ 5 seconds
Add flour sugar, baking powder and eggs and blend speed 6/ 10 seconds
Pour over fruit and sprinkle with almonds.
Bake at 350 F for 45 minutes until golden.

Thermomix Guava butter

500g Guava
150 g Water
250g sugar
Chop guavas 10 seconds/speed 7
Add water and cook 15 minutes/varoma/speed 2 With sieve on top and measuring cup removed.
Sieve mixture and return to Thermomix bowl.
Add sugar and some water(50g) and cook 15minutes/varoma/speed 3 With sieve on top and measuring cup removed.
*Place straining basket on top of bowl with measuring cup removed during cooking.*
