Thermomix Almond Sweets(Gluten free)

150 g sugar
300g ground almonds
30g rose water
20g cognac
100g sugar and rose blossoms for rolling

Place sugar into mixing bowl, pulverize 15 sec/ speed 10
Add almonds and grate 10 sec/ speed 6 (I didn't peel them first)
Add rose water and cognac KNEAD 6 sec/speed 6
Roll into balls and then roll in sugar and dried rose petals

Thermomix Ravioli, Stuffed with Ricotta, Spinach and whole egg.

Pasta Dough
3 eggs
300g OO flour(white)
1Tbsp olive oil
Put all ingredients into bowl 2 min/closed lid and KNEAD button
Roll out and let rest.







For filling. Saute 1 onion/2min/100C
Add spinach/ saute 1 minute 
Chop 3 seconds
Add salt, pepper and nutmeg
Roll out dough and place filling with a hole in the centre.
Add egg and  egg wash around filling
Place pasta on top and seal and cut to size.
Cook in salted water 3-4 minutes.

Thermomix Pirogi, (Ricotta Dumplings)

These dumpling's are super easy and can be sweet or savoury!
300gram Ricotta (I used the paneer from previous post)
1-2 eggs depending how dry the cheese is
300 g flour
Place all ingredients in mixing bowl and use dough KNEED/lid closed/1-2 minutes
The time depends on how wet your dough is.  It should be like the photo.
Cool 30 minutes.
Roll out into logs and cut.
Cook in salted water until they float on top.
Serve with sweet or savoury sauce.
I used brown butter and fresh sage.
Sweet would be sugar, butter and breadcrumbs.

35gram rice(I used brown)
850 gram vegetable stock
450-500 gram fresh peas (you can use frozen)
pepper to taste
pulverize rice 1min/speed 10
Add stock cook 6 min/ VAROMA 120C/ speed 5
Add peas (frozen take longer approx. 7 min) 6minutes/100C/speed 5,
last 15 seconds speed 10

Fry a little pancetta(Italian bacon) or regular bacon, proscuitto for garnish and a mint leaf
or make mint, chive oil
