Raw Chocolate Truffle with Cacao Nibs

100g Cacao Nibs, set aside
250g Hazelnuts, blend 5 seconds/ speed 9, until flour consistency
Add next ingredients
250g Medjool dates pitted
100g cocoa powder
60g coconut oil, melted
1 tsp sea salt
coconut for decoration
Blend 30 seconds/ speed 6 until it sticks together
Add 1 tsp water to bind if not sticky enough , repeating as necessary.
Sometimes the nuts are too dry or the dates etc.  It is always slightly different for everyone depending on ingredients and how fresh they are etc...

Dried Orange Hummus Balls

This is something different than having hummus and easier to take as an appetizer. They need to be baked for 12 minutes and then cooled.
600g cooked chickpeas
100g dried oranges(you can substitute any dried fruit)
50g Tahini
1/2 juice of 1 lemon
rind of 1 lemon
4 garlic cloves
fresh sprig of rosemary
pinch paprika
2 Tsp olive oil
Add all ingredients and blend until smooth speed8/25 seconds
Cool 30 minutes and shape into balls.
Bake on parchment lined paper for 12 minutes at 350F.
Cool and serve with dip of your choice.

Thermomix Keftedes, Chick Pea Meatballs with Spinach

I was watching Gordon Ramsay on his cooking show when he made these simple keftedes with some Tzatziki and thought that would be perfect to take to my night school class as a savoury appetizer.  I modified the ingredients so that I could make them quickly in my Thermomix. It worked out really well and was quite tasty! I also soaked dried chickpeas overnight and cooked them the following morning without adding salt.  This can make them not soften if you add salt when you are cooking them.

Grind 100g dried chickpeas into chickpea flour  20 sec/speed 8, set aside
In bowl add 500g cooked chickpeas
Blend speed 8/20 seconds, set aside.
Add 1 onion, 2 shallots, 200g spinach, 2 garlic cloves, blend speed 8/ 10 seconds, scrape down
Cook onions, garlic and spinach for 2mins/100C/speed 1
Add 1 tsp salt and pepper to taste
Add ground chickpeas and dried chickpeas
Mix until combined on REVERSE  speed3/ 30 seconds
Cool for 30 minutes.
Shape into quenelles with spoon and fry in oil.
Let drip and season again if necessary.
Serve with Tzatziki.

Mashed cooked chickpeas

Onions, garlic, spinach 

Combine all and season with salt and pepper 

Put in fridge and cool for 30 minutes

Fry in oil.

Serve with Tzatziki.
