Pork Adobo in Thermomix


Pork Adobo is a very yummy dish! My coworker who is Filipino makes it and I have tried to recreate it in the Thermomix.  My family thought it was really delicious and worth remaking. I believe it is made with chicken mostly. I also made a garlic and fried onion brown rice to go with it. Also yummy!





Ingredients
1 onion cut into larger chunks
700 g pork cut into 1 inch cubes
6 garlic cloves
3 bay leafs
1 MC full of apple cider vinegar (MC measure cup)
2 MC full of water
3 T soy sauce
3T oyster sauce
1 tsp black peppercorns (maybe grind because nobody likes biting into one)
1/2 MC brown sugar

Coconut Lime Spritzer in Thermomix

This is out of the Festive Flavour cookbook. It is on page 112 and looks absolutely fantastic.  It also tastes really great. I can imagine this  tasting fantastic in the summer.

Ingredients:
200g ice cubes
750 ml white wine (chilled) sauvignon blanc
250 g coconut water (chilled)
300-500g lemonade (chilled) I made mine in the Thermomix so it's slightly cloudy
I lime thinly sliced
seeds from 1 pomegranate

Place ice in bowl crush 5 sec/speed 5
Add remaining ingredients 10 sec/REVERSE/speed2
Serve and enjoy!

Yogurt Cake in Thermomix

This cake has turned into my husbands favourite as all he has to do is hit the next button.  It is very moist and looks impressive.  It is on page 128 of The Basic Cookbook. Doesn't this look delicious!

YUMMY!!!!!


Ingredients:
 80 g sunflower oil
zest of organic lemon
150g sugar
3 eggs
200g flour
120g yogurt
1 pinch salt
1 tbsp baking powder
30g icing sugar

Pre heat oven to 180C. Grease a bundt pan.
Place lemon zest and sugar into mixing bowl and grind 10 sec/ speed 10. Scrape down
Add flour, yogurt, sunflower oil, salt and mix 1 min/ speed 5
Add baking powder and mix 15 sec/speed 5
Place mixture into prepared cake pan and bake 30 minutes 180C. Allow to rest before taking it out of the pan.
Dust with icing sugar and Enjoy!


Thermomix Mango Coconut Chia Pudding

This has to be a really easy dessert to make.  Peeling the mangoes is the hardest part.  It is really fast to make. You only need cooling time. The better the mangoes taste the better the dessert.

Ingredients;
3 ripe mangos
1 can of coconut milk
1 tsp vanilla
1/2 juice of lemon
2 T chia seeds
Put mangos in Thermomix and blend 6sec/speed8
Add all other ingredients and blend 5 sec/speed 8
Spoon into cups and cool at least 2 hours.
Serve with garnish.

Thermomix Quick Tips - Orange and passionfruit curd

I

I just made this using my own ingredients so I had yo do a bit of guesswork but it turned out really nice. I didn't sieve the seeds out as then there would be almost no juice to use. In Canada the passion fruits are very expensive and hard to find. I used fresh ones but I know you can get the juice in cans too.
Ingredients;
4 passion fruits pulp scraped out
185 g orange juice
120g sugar
200g butter
4 eggs

Place butterfly and all ingredients into bowl.
When temperature is up to 80C time for 8 minutes/speed 3.
I served in over chopped fruit and it gave a nice tang.

Thermomix Uni Pasta

The great thing about Chinese New Year is that a lot of the local stores carry products that you don't usually see. My husband happened to find some Uni at a local store. The only thing is that it was packaged like it was made out of gold.  The great thing about my Thermomix is that I can check weights and see how accurate weights are. I was charged for 130g but only received 95g of Uni. The packaging weighed 35g. Hows that for taking advantage of the consumer.

Ingredients:
95g Uni
80g good olive oil
package of linguine or pasta of your choice.
Place uni and oil in bowl10 sec/speed6
Pour over hot pasta and serve sprinkled with salt.
