Gorgonzola Panna Cotta in Thermomix


Gorgonzola Panna Cotta in Thermomix is from the Vegetarian  Kitchen Cookbook. This book also comes with a chip so it's very easy to follow. It is made with agar agar instead of gelatine and it turned out really well.  I really enjoyed it but the other members of my family found it tasty but unique.  They also do not like blue cheese so if that's you I would say to try a different recipe.  This is on page 52.

Ingredients:
 90g Gorgonzola ( I also used stilton which has a much stronger taste)
400g milk
300g whipping cream
3/4 tsp agar agar

Place milk and cream into bowl cook 5 mins/37C/speed 2
Add agar agar and cook 10 mins/90C/speed 4
 Add pre-weighed Gorgonzola through hole in mixing bowl lid while cooking 2 mins/90C/speed 2
Pour into ramekins and refrigerate minimum 3 hours or overnight.
Enjoy with a salad, pears and walnuts.

Hazelnut Lime Cheesecake Thermomix

This recipe is from the Fabulous Flavour on Every Level Cookbook. All the recipes in this cookbook use the Varoma.  I have been experimenting with it and this turned out really well.  It uses pistachios originally and is on page 228.  I have altered the recipe to suit the ingredients that I had on hand. It is gluten free too.

Ingredients:
55 g Hazelnuts. (I roasted mine for 3 minutes/Varoma/stir first)
butter for greasing ramekins
organic lime zest from 1 lime
80g sugar
30g cornstarch
300 g ricotta
250g cream cheese
4 eggs
500g water
fruit for garnish

Chop nuts 4 sec/speed7
Butter ramekins and sprinkle with nuts. Save reserved nuts for garnish
Place sugar, lime zest, cornstarch, 15 sec.speed9 Scrape down
Add cream cheese, ricotta and eggs 10 sec/speed 4.5
Pour mixture into ramekins not to top (it expands)
Cover with plastic wrap and steam in Varoma 25/Varoma/speed 2
Garnish with mint leaf and reserved nuts, Adding chopped fresh fruit.

Cevapcici in Thermomix








On the Barbeque!!!

This recipe is on page 246 in the cookbook Entertaining with Dani Valent. It comes with a recipe chip and was very easy to follow. I did change a few things like adding more garlic.  I have a reliable butcher so I didn't grind my own meat.  I usually do but not today.

Ingredients:
2 garlic cloves
200g red peppers roasted and peeled
1-2 tsp chilli powder
1-2 tsp salt
1/2 tsp black pepper
300g ground lamb
300g ground pork
300g ground beef
olive oil for brushing
1 lemon cut into wedges to serve

Place garlic into mixing bowl and chop 2 sec/ speed 5. Scrape down
Add red peppers,chilli, salt and pepper and mix 15 sec/speed 4
If you are grinding your own meat, place red pepper mixture into a bowl.
If not add ground lamb, beef and pork.
To grind meat, do each type separately.
Grind partially frozen meat cubes 12 sec/ speed 6
Place red pepper and meat mixture into bowl and using BREAD icon mix 2 minutes until combined.
(I think using dough/bread button mixes meat better then by just blending it)
Using damp hands shape into sausage form.
Barbecue until cooked through. (appraise 3 mins on each side)

Mango and Mustard Seed Condiment

I was watching Theresa Visintin on A is for Apple on  the gusto network. Since I have made mustard from scratch before I was curious to give it a try.  I also like the idea of using fresh mangos to turn the mustard yellow. On her show she was using a coffee grinder to mill the mustard seeds which looked a little tedious.  I ground 300g in 10 seconds in my Thermomix. WOW. I know Theresa has a Thermomix so she probably would have liked to use that too. Maybe they will let her use it on her show. This recipe makes a lot of mustard about 3 1/2 cups so you can probably make half. My other mustard recipe is cooked so it will last a long time in the fridge. Using fresh mangoes shortens the shelf life. For less kick use 2 Thai chilli's.

Ingredients:
400g Atulfo Mangos (4 large)
2 Thai chilli peppers
4 garlic cloves
300g Mustard seeds
60g apple cider vinegar
2 tsp salt
freshly ground black pepper

Place mustard seeds in bowl and grind 10 seconds/speed 10
Add all other ingredients and process until desired consistency.
30 seconds/speed 7
Chill and enjoy!

Rice Pudding in Thermomix

This recipe is on the chip for The Basic Cookbook page 322.  I followed it exactly and it was delicious.  My husband loves rice pudding and he is always buying the store bought stuff which has tons of additives and preservatives.  He is also a diabetic and it has tons of sugar.

Ingredients:
1000g milk
50g sugar
1 pinch of salt
220g white short grain rice ( I used sticky rice)

Put milk, sugar and salt and heat 8min/Varoma/speed 1 without measuring cup
Add rice and cook 30min/90C/speed 1
Pour into serving dishes and let rest 15 minutes.
Sprinkle with cinnamon if desired.
Enjoy!!!! YUM!!!!!!!

Tahinni in Thermomix

I was recently asked about nut butters and how easy they were to make.  As I make a lot of hummus I have been wanting to make my own Tahinni from scratch as all it is is ground up sesame seeds.  i bought some roasted gmo organic ones and decided to give it a try. Super easy!

260g sesame seeds
Place in bowl and turn to speed 8/ for up to 3minutes scraping down in-between.
Finished. If you want it super smooth do it for 1 minute longer.
I stopped because it is loud and my husband was sleeping. He works shift work. Sesame seeds are very high in calcium.
